Wine and tacos, the perfect pairing?

This iconic Mexican dish, so popular around the world, has also made its way to Chile. The good news is that it pairs very well with Chilean wine. Here we recommend some pairings that shouldn’t forget trying.

Al pastor

This is one of the most traditional and popular tacos around the world, consisting of roast pork, previously marinated with fruit juice, chili peppers, and spices such as achiote, oregano, and cumin. Although the recipe changes according to the region where it is prepared, generally the pork is served with pineapple, chopped onion and cilantro on a corn tortilla. When pairing them with wine, it is important to consider the fat content of the pork and its sweet notes; it needs a refreshing wine with good acidity such as Marques de Casa Concha Rosé Cinsault.

Barbacoa

Typical from the Mexican state of Jalisco, these tacos are made with beef that is cooked in a pan or on the grill, giving it more texture and chew to each bite. To enhance the flavour of the meat, these tacos are accompanied by a sauce that also varies according to the region. A very typical and tasty one is the red sauce, made with tomato, dried chili peppers, garlic and spices like cumin, which in addition to a vibrant colour, gives the taco spiciness. Then there is also chopped onion and of course, cilantro. A good match for the Barbacoa Tacos is Marques de Casa Concha Cabernet Sauvignon, which thanks to its slight acidity and presence of tannins helps to balance the flavours of the taco.

Carnitas

Carnitas basically consist of pork that has been slowly cooked in its own fat for hours. The result is extremely tender and juicy meat, while the edges can become crispy. Served on a warm corn tortilla, it is also accompanied by a sauce made with tomatoes, onion, garlic, coriander and chili peppers. Since carnitas are very delicate, our recommendation for pairing is to go for a white wine such as Marques de Casa Concha Chardonnay.

Fish

Baja California style fried Fish Tacos have their origin in the coastal city of Ensenada. From there they have become popular throughout the world thanks to the recipe that consists of pieces of breaded and deep-fried white fish, which is served with fresh and crunchy cabbage salad on a corn tortilla, along with a spicy mayonnaise. A light and fresh taco that needs a wine at the same level, such as Marques de Casa Concha Chardonnay. An ideal harmony for summer days.

Chipotle Black beans

A vegetarian option, as well as an excellent source of protein, are always black beans. When cooked together with chipotle, they are really tasty and ideal to serve on corn tortillas with guacamole and white cheese.
