5 dishes to pair with Pinot Noir

Considered the most popular light-bodied red wine of all, with its extreme delicacy, Pinot Noir is a great alternative to bring to the table thanks to its versatility.

Light to medium-bodied, this wine variety offers a complex nose, and a palate marked by its refreshing acidity and subtle presence of tannins. All these reasons make it a perfect candidate to accompany a huge variety of dishes because, in addition, it is a very easy wine to drink. Here are some ideas:

Mushroom Risotto

Rice, pasta or any type of preparation where mushrooms predominate, are perfect to accompany with a Pinot Noir. Among the aromatic characteristics of this variety, a forest floor or earthy aroma stands out, which is often reminiscent of mushrooms. This similarity makes dishes such as a Mushroom Risotto (whether morels, Paris, portobello, porcini, etc.) a perfect complement to this variety.

Lamb sweetbreads

Thanks to their delicate texture and mild flavour when fried or grilled, lamb sweetbreads are a real delicacy that should be accompanied by a drink that is up to par, but without overpowering their flavour. Due to its rich concentration of red fruit flavours and refreshing acidity, Pinot Noir is an ideal wine grape to counteract the powerful fat content of this product, cleansing the palate with its refined texture and highlighting the flavour of the sweetbreads.

Seared salmon

Very rich in healthy fats, wild salmon (as opposed to farmed salmon) stands out for its slightly sweet flavour that is accentuated when it is seared on the outside, leaving a juicy meat on the inside. Seasoned only with salt, pepper and a bit of herbs, this oily fish can be perfectly accompanied by light reds such as Pinot Noir. The same goes for Tuna. These are stronger fish, with more intense flavours, which may require fuller-bodied wines than white varieties. That’s why a Pinot Noir with delicate tannins and very good acidity never fails.

4 Cheese Pizza

There are few things more comforting than a classic pizza: just cheese. Its simplicity, however, requires a wine capable of balancing its intense and creamy flavours, through good structure and subtle tannins. Above all, when cheeses with stronger flavours such as blue cheese or gorgonzola are incorporated.

Pork Chops

Lastly, Pinot Noir is highly recommended to accompany white meats such as chicken, turkey or pork. Thanks to its light tannins and great fruitiness, even smoky notes in some cases, this variety pairs very well with very tender cuts of pork such as pork chops or belly.
