What are empyreumatic aromas?

Empyreumatic aromas (torrefaction) are smoky notes present in some wines. When pleasant they may recall hay, tea, tobacco, coffee, toasted almonds, tar, and burnt caramel. When unpleasant, they produce odors of burnt cloth, paper, or rubber.
