What I like most is that it has the same explosion of flavors as curries, but in a cold and light version. Its main ingredient is vermicelli noodles (also called glass noodles, because they are transparent), with ground pork, vegetables, and herbs, with a dressing of sweet, sour, and salty flavors.<\/span><\/p>\n<p><b>Ingredients (3 portions):<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">100 grams vermicelli<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">250 grams ground pork<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bd cup cherry tomatoes, halved<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 green onions, chopped<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 medium shallot, thinly sliced<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">4 teaspoons cilantro (coriander), chopped<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bd cup peanuts, chopped<\/span><\/li>\n<\/ul>\n<p><b>Dressing:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 tablespoons palm sugar or light brown sugar<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Juice of 3 limes<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 tablespoons fish sauce<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 clove garlic, grated<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chili paste (optional)<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Soak the noodles for about 5 minutes and drain well. Place them in a pot of boiling water for 1 minute, scoop them out of the water and set aside. In the same hot water, boil the pork until cooked through, drain, and add it to the noodles. Mix the dressing ingredients together and add the mixture to the noodles and pork. Mix well so the noodles are thoroughly coated with the dressing and then add the green onions, shallots, tomatoes, and cilantro. Serve topped with a sprinkling of chopped peanuts, and enjoy with a glass of ros\u00e9 wine such as the <\/span><b><a href=\"https:\/\/marquesdecasaconcha.com\/en\/wines\/rose-cinsault\/\">Marques de Casa Concha Ros\u00e9 Cinsault<\/a>.\u00a0<\/b><\/p>\n<p><img decoding=\"async\" class=\"alignnone size-medium wp-image-25100\" src=\"https:\/\/marquesdecasaconcha.com\/wp-content\/uploads\/2023\/02\/recetas-livianas-2-800x533.jpg\" alt=\"\" width=\"800\" height=\"533\" srcset=\"https:\/\/marquesdecasaconcha.com\/wp-content\/uploads\/2023\/02\/recetas-livianas-2-800x533.jpg 800w, https:\/\/marquesdecasaconcha.com\/wp-content\/uploads\/2023\/02\/recetas-livianas-2-768x512.jpg 768w, https:\/\/marquesdecasaconcha.com\/wp-content\/uploads\/2023\/02\/recetas-livianas-2.jpg 1200w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<h5><b>Saut\u00e9ed Artichokes, Lima Beans, and Mint<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">I tried this dish in a relatively new restaurant in Hackney, London, and it stole my heart because it\u2019s a selection of my favorite vegetables mixed together and served hot\u2014artichoke hearts and tender lima beans saut\u00e9ed with a ton of olive oil and a bit of lemon juice.<\/span><\/p>\n<p><b>Ingredients (2 portions):<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">4 artichoke hearts<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">100 grams tender lima beans<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 anchovy fillet<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Juice of 2 lemons<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 clove garlic, minced<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 shallot, minced<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chili flakes\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Olive oil<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Cut the artichoke hearts into quarters. In a frying pan, saut\u00e9 the anchovy fillet in abundant olive oil until it dissolves. Add the artichokes, garlic, shallots, and lima beans and saut\u00e9 briefly. Add the lemon juice and mint, and finish with a pinch of dried chili flakes. It\u2019s also super easy to prepare. Just be sure to use ingredients of excellent quality.<\/span><\/p>\n<p><b>Ingredients (1 portion, serves 2)<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 burrata<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 blood orange, peeled and separated<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Toasted hazelnuts, chopped<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fresh mint leaves<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Olive oil<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Place the burrata in the center of a plate and arrange the orange slices around it. Drizzle it with abundant olive oil and sprinkle the hazelnuts, mint, and salt and pepper to taste.
